Foodservice Performance Evaluation

Broward College selected B&D in 2014 to perform a contract compliance and quality assurance audit of the foodservice operations at its three campuses: North, Central, and South. The audit focused on the foodservice contractor’s operational and financial performance in all three campus cafés since the contract began in 2012. Our scope of work began with a review of research findings from a 2013 campus foodservice survey. We then completed a financial performance audit of all three foodservice sites for the prior 11 months that covered the revenue effect of installing several brand name fast food operations in all three sites, marketing and promotion plans, catering revenue, and menu innovations. This operations assessment included furniture and décor changes, food handling issues, signage, equipment/servery/kitchen sanitation, recycling, and refrigeration capabilities. As a result, we presented to the college several ways to strengthen the foodservice business model, including the careful addition of food and beverage venues, a tighter catering commission policy, closer monitoring of marketing and promotion efforts, and ongoing proactive inspections.
