Dining Services Master Plan; University Center Renovation Advisory Services

In 2013 Lehigh University engaged B&D to complete a Dining Services Master Plan. The university had three overall objectives for its dining program: to provide a competitive recruitment advantage, to achieve and sustain high end-user satisfaction levels, and to meet the institution’s financial goals. The assignment required us to establish a foundation for evaluating the current program, and then to analyze operations from both a financial and contractual perspective. We conducted key stakeholder interviews, which underpinned the development of a survey addressing the campus community’s dining experiences, satisfaction levels, and future dining needs. The team also assessed campus population migrations to establish foodservice demand across campus based on time of day and academic calendar. The result was a master plan with end-user supported recommendations grounded in the university’s three overall objectives. The plan provided clear priorities and recommendations, serving as a guiding document for the ensuing contract renegotiation.

In tandem with the master plan, we were engaged to advise the university during the planning of a large-scale renovation to its University Center. The historic building houses two primary dining facilities, a coffee shop, and an upscale campus restaurant. The ultimate goal of the renovation is to create a dynamic hub of campus community and culture.
